Beef roast3 lb · 1.4 kg
Butter2 tbsp · 30 g(softened)
Dijon mustard2 tbsp · 30 ml
Fresh herbs2 tbsp · 6 g(such as thyme, rosemary, or parsley)
Salt1 tsp · 6 g
Pepper½ tsp · 3 g
Puff pastry1 lb · 450 g(thawed)
Egg wash1(beaten egg mixed with 1 tbsp water)
Instructions
Preheat the oven to 350°F (180°C).
Place the beef roast in a roasting pan. In a small bowl, mix together the butter, mustard, fresh herbs, salt, and pepper. Spread the mixture over the top and sides of the beef roast.
Roll out the puff pastry on a lightly floured surface to a large rectangle, large enough to fully enclose the beef roast. Place the beef roast in the center of the puff pastry and wrap the pastry around the roast, making sure to seal all the edges. Brush the pastry with the egg wash.
Place the beef en croûte in the oven and roast for 2 hours, until the internal temperature reaches 135°F (57°C) for medium-rare. Let the beef rest for 10 minutes before slicing and serving.
This is the roast that only appears when the good plates come out. Cutting through the crust into the pink center is the moment the whole table goes quiet, then loud.
