A simple and delicious French cake made with yogurt and basic pantry ingredients. It is moist, tender, and flavorful, with a hint of lemon.

All-purpose flour1½ cups · 190 g
Baking powder2 tsp
Sugar1 cup · 200 g

Plain yogurt1 cup · 245 g
Lemon zest1 tbsp
Vanilla extract1 tsp
Canola oil½ cup · 120 ml
Instructions
Preheat your oven to 350°F (180°C).
In a medium bowl, whisk together the flour and baking powder.
In a separate large bowl, beat the sugar and eggs until light and fluffy. Beat in the yogurt, lemon zest, vanilla extract, and canola oil until well combined.
Gradually add the dry ingredients to the wet ingredients and mix until just combined.
Pour the batter into a greased 9-inch round cake pan and smooth the top.
Bake the cake until a toothpick inserted into the center comes out clean, 35–40 minutes.
Let the cake cool in the pan for 10 minutes, then transfer it to a wire rack to cool completely.
Serve the cake with a sprinkle of powdered sugar or a dollop of whipped cream, if desired.
This is the first cake many French kids ever bake, measured out in the empty
yogurt pot instead of a scale. It forgives almost anything and always comes out
tender.
The Chef's Touch This simple cake is delicious as is, but you can also add flavorings or mix-ins to the batter. Try folding in some fresh fruit, nuts, or chocolate chips, or adding a splash of liqueur or extract for an extra burst of flavor.
