Ingredients
All-purpose flour1½ cups · 190 g
Unsweetened cocoa powder1 cup · 85 g
Baking powder2 tsp
Salt½ tsp · 3 g
Sugar1½ cups · 300 g
Eggs4
Milk1 cup · 240 ml
Canola oil½ cup · 120 ml
Hot water1 cup · 240 ml
Vanilla extract1 tsp
Instructions
Preheat your oven to 350°F (180°C).
In a medium bowl, whisk together the flour, cocoa powder, baking powder, and salt.
In a separate large bowl, beat the sugar and eggs until light and fluffy. Beat in the milk, canola oil, and vanilla extract until well combined.
Gradually add the dry ingredients to the wet ingredients and mix until just combined. Stir in the hot water until the batter is smooth.
Pour the batter into a greased 9-inch round cake pan and smooth the top.
Bake the cake until a toothpick inserted into the center comes out clean, 35–40 minutes.
Let the cake cool in the pan for 10 minutes, then transfer it to a wire rack to cool completely.
Serve the cake with a sprinkle of powdered sugar or a dollop of whipped cream, if desired.
The hot water at the end always looks like a mistake and never is — it's the
secret to how deep and glossy the batter turns. This was the cake requested for
every birthday, no exceptions.
The Chef's Touch This classic chocolate cake is delicious on its own, but you can also add flavorings or mix-ins to the batter. Try folding in some nuts, dried fruit, or chocolate chips, or adding a splash of liqueur or extract for an extra burst of flavor.
