Broccoli and Cabbage Gratin

Gratin de Brocoli et Chou

A creamy and delicious side dish made with broccoli and cabbage. It is baked with a crunchy topping of breadcrumbs and cheese, and is the perfect accompaniment to any meal.

Ingredients

  • Broccoli1 head (cut into florets)
  • Cabbage½ head (thinly sliced)
  • Unsalted butter2 tbsp · 28 g
  • All-purpose flour2 tbsp · 16 g
  • Milk1 cup · 240 ml
  • Salt½ tsp
  • Pepper¼ tsp
  • Parmesan cheese½ cup · 50 g (grated)
  • Breadcrumbs½ cup

Instructions

  1. Preheat your oven to 375°F (190°C). Lightly grease a 2-quart baking dish.
  2. In a large pot of boiling salted water, cook the broccoli and cabbage until they are tender, about 5–7 minutes. Drain and set aside.
  3. In a medium saucepan, melt the butter over medium heat. Add the flour and cook, stirring constantly, until the mixture is bubbly. Gradually whisk in the milk and bring the mixture to a boil. Reduce the heat to low and simmer until the sauce thickens, about 2–3 minutes. Season with salt and pepper.
  4. In the prepared baking dish, layer the broccoli, cabbage, and sauce. Sprinkle the Parmesan cheese and breadcrumbs over the top.
  5. Bake the gratin until it is hot and bubbly and the topping is golden brown, about 25–30 minutes.
  6. Serve the gratin hot, as a side dish.
